  • 100g grated cheese (optional)

Step-by-step preparation for perfect vegetarian stuffed zucchini:

  1. Preparing the zucchini: Wash the zucchini, cut them in half lengthwise and scoop them out with a spoon. Reserve the flesh.
  2. Cooking quinoa: Cook the quinoa according to package directions.
  3. Preparing the filling: In a pan, heat the olive oil and add the chopped onion, diced pepper, mushrooms and minced garlic. Add the zucchini flesh and cook until the vegetables are tender.
