Savory vegetable muffins

Ingredients :

  • 2 zucchini
  • 2 carrots
  • 1 red pepper
  • 200g flour
  • 1 sachet of baking powder
  • 3 eggs
  • 100 ml olive oil
  • 100 ml of milk
  • Salt and pepper

Preparation :

1. Preparation of vegetables

Grate the zucchini and carrots, and cut the pepper into small cubes. Brown the vegetables in a little olive oil for a few minutes, then let them cool.

2. Preparing the dough

In a bowl, mix the flour and yeast. Add the eggs, olive oil and milk. Mix well until you get a smooth paste.

3. Assembly

Add the cooled vegetables to the dough and mix gently. Season with salt and pepper to taste.

4. Cooking

Divide the mixture into muffin tins and bake in a preheated oven at 180°C for around 25 minutes, until the muffins are golden brown and firm to the touch.
