This sweet potato and spinach green curry is the perfect vegetarian recipe

Want a tasty, comforting and quick-to-prepare dish? This green curry of sweet potatoes, spinach and zucchini is the ideal solution! This vegetarian recipe, rich in flavors and colors, is ready in just 20 minutes. Perfect for evenings where you want to eat well without spending hours in the kitchen.

Ingredients :

  • 2 sweet potatoes medium, peeled and diced
  • 1 zucchini, diced
  • 200 g cooked chickpeas (pea zucchini)
  • 150 g ofspinach costs
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 2 tablespoons of paste green curry (Or red curry for a variation)
  • 400 ml coconut milk
  • 1 tablespoon of vegetable oil
  • Salt and pepper
  • Fresh cilantro for garnish (optional)
  • Cooked basmati rice to accompany

Preparation (20 minutes):

  1. Heat the oil in a large saucepan over medium heat. Add the chopped onion and fry until translucent.
  2. Add the garlic chopped and the paste green curry. Cook for 1 minute to release the aromas.
  3. Add the sweet potatoes and the zucchini. Mix well to coat the vegetables with the curry paste.
  4. Pour in the coconut milk in the pan. Bring to a boil, then reduce the heat and simmer for 10 minutes, until the sweet potatoes are tender.
  5. Add the chickpeas and the spinach. Cook for another 5 minutes, until the spinach is wilted and the chickpeas are warmed through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh coriander if desired, accompanied by basmati rice.
