The Refinement of Leek in a Savory Tart
Ingredients :
- Shortcrust pastry : 1 roll
- Leeks : 3, finely chopped
- Eggs :4
- sour cream : 250ml
- Smoked bacon : 150g (optional for a vegetarian version)
- Grated cheese (Emmental or Gruyère) : 100g
- Nutmeg : a pinch
- Salt and pepper : to taste
- Butter : 20g
Preparation :
- Melting leeks : In a pan, melt the butter and add the sliced leeks. Fry them until they are tender and lightly browned.
- Crispy bacon : In another pan, brown the bacon until they are nicely browned. Reserve.
- Preparing the device : In a bowl, beat the eggs with the sour cream. Season with salt, pepper and a pinch of nutmeg. Then add the grated cheese.
- Assembly : Spread the shortcrust pastry in a tart mold. Arrange the leeks and bacon on the bottom. Then pour the mixture over everything.
- Cooking : Preheat the oven to 200°C. Bake the quiche for 30-35 minutes, until the surface is golden brown.
