Ingredients :
- 500g strawberries
- 24 spoon cookies
- 20cl of liquid cream
- 100g of sugar
- 6 leaves of gelatin
- The juice of an orange
Preparation :
1. Preparing the strawberries
Wash, hull and cut the strawberries in half. Reserve a few for decoration.
2. Dipping Cookies
In a bowl, pour the orange juice. Quickly dip each biscuit in the orange juice and place them at the bottom and around the edges of a charlotte mold.
3. Preparation of the cream
Soften the gelatin in cold water. Meanwhile, mix half the strawberries with 50g of sugar to obtain a coulis. Heat a small part of this coulis and dissolve the drained gelatin in it. Add the rest of the coulis and mix.
Whip the cream with the rest of the sugar. Gently incorporate the strawberry coulis into the whipped cream.
4. Assembly of the charlotte
Place a layer of strawberries at the bottom of the mold, then a layer of cream. Repeat the operation until the ingredients are used up. Finish with a layer of biscuits.
5. Refrigeration
Cover the charlotte with plastic wrap and place it in the refrigerator for at least 3 hours.
6. Unmoulding and decoration
Unmold the charlotte onto a serving dish. Decorate with the reserved strawberries.
