Ingredients :

  • Fresh ground beef : 200g (choose quality meat, such as fillet)
  • Egg yolk : 1
  • Capers : 1 tablespoon
  • Pickles : 2-3, finely chopped
  • Red onion : 1 small, finely chopped
  • Flat-leaf parsley : chopped, to taste
  • Tabasco : a few drops (optional)
  • Mustard : 1 teaspoon
  • Olive oil : 1 tablespoon
  • Salt and pepper : to taste

Preparation :

  1. Meat selection : Be sure to use premium, extra-fresh meat. Ask your butcher to grind the meat the same day.
  2. Mixing condiments : In a bowl, combine chopped red onion, pickles, capers, mustard, Tabasco (if using), and olive oil.
  3. Incorporation of meat : Carefully add the ground beef to the condiment mixture. Mix carefully so as not to overwork the meat.
  4. Seasoning : Add the egg yolk, parsley, salt, and pepper. Mix until you obtain a homogeneous consistency.
  5. Dressage : Form a round pâté and place it in the center of a plate. Serve with grilled toast, a green salad or fries.
