Ingredients :
- 250g mascarpone
- 3 eggs
- 100g of sugar
- 200g fresh raspberries
- 20 spoon biscuits
- 1 sachet of vanilla sugar
- Raspberry juice or coulis to soak the biscuits
Preparation :
1. Separate the egg whites from the egg yolks
Start by separating the egg whites from the egg yolks. Reserve the whites in a bowl to whip them until stiff later.
2. Prepare the mascarpone cream
In a salad bowl, mix the egg yolks with the sugar and vanilla sugar until the mixture turns white. Then add the mascarpone and whisk until you obtain a smooth cream.
3. Beat the egg whites
Beat the egg whites until stiff. Gently incorporate them into the previous preparation using a spatula to keep them light.
4. Soak the biscuits
Soak the biscuits with a spoonful of raspberry juice or coulis, then place them at the bottom of a dish.
5. Prepare the tiramisu
Cover the biscuits with half of the mascarpone cream, then arrange a layer of raspberries. Repeat the operation a second time. Finish with a few raspberries for decoration.
6. Let it rest
Place your raspberry tiramisu in the refrigerator for at least 4 hours before serving. Ideally, prepare it the day before so that it is very firm.
Note :
For a more indulgent variation, don’t hesitate to add grated white chocolate on top just before serving. Enjoy your food!
