  1. Preparing the cookie dough: In a bowl, mix the oatmeal, spelled flour, baking powder, cinnamon and salt. Reserve.
  2. Preparing the filling: In another bowl, beat the softened butter and coconut sugar until creamy. Add the egg and vanilla extract, then mix until you have a smooth paste.
