It’s the beginning of December and on the day I write this recipe, the snow is covering the area around our house with a very fine white coat. Also, I had the idea of offering you a cookie recipe to get you in the Christmas spirit. To achieve these, you will need Christmas cookies with orange blossom, cookie cutters in the shape of Christmas objects.
The ingredients:
– 200 grams of gluten-free flour (rice flour, quinoa flour)
– 100 grams of almond powder
– 100 grams of sugar
– Half a teaspoon of baking powder
– 125 grams of margarine
– Four tablespoons of vegetable milk
– Half a tablespoon of orange blossom
– 40 grams of candied fruit (Orange or melon)
Preparation (20 minutes)
1 – In a food processor bowl, put the flour, baking powder, almond powder and sugar
2 – Mix in the robot
3 – Cut the candied fruits into small pieces and put them in the food processor and mix again
4 – Add the margarine to the bowl and run the robot
5 – Once the dough is sandy, add the vegetable milk and the orange blossom, leaving the robot running.
6 When you obtain a dough in a non-sticky ball (add flour if not), refrigerate for 20 minutes
7 – Spread the dough on a floured work surface and form shapes with cookie cutters (three to four millimeters thick)
8 – Brush the biscuits with vegetable milk to brown them
9 – Bake for 10 minutes at 180 degrees.
