Ingredients :
– 1 kg of flour
– 300 g of sugar
– 20 g of baker’s yeast
– 4 eggs
– ¼ liter of olive oil
– 2 tablespoons of anise seeds
– 3 oranges (zest)
– Salt
– 1 glass of orange blossom water
Preparation
1. Put the yeast in half a glass of sugar water and dilute well.
2. Add 100 g of flour and mix to make a sourdough.
3. Leave to rest for 2 hours so that the sourdough doubles in volume in a warm place.
4. Pour the flour into a salad bowl, the sugar and a pinch of salt.
5. Make a well in the middle and add the eggs, olive oil, orange zest, orange blossom water and anise seeds.
6. Knead for a long time until you obtain a soft dough.
7. If necessary add water.
8. Make a ball and let it rise for 3 hours in a warm place.
9. Knead the dough again and make 2 round pancakes with a rolling pin.
10. Make a small circle in the middle with a knife and 5 star rays.
11. Place the pumps on well-oiled plates and leave to rest for 2 hours.
12. Bake for 30 minutes at 240°.
