Ingredients for approximately 10 pancakes:
- 200g flour (classic wheat flour or gluten-free flour for a gluten-free version)
- 50 g of sugar (optional, for sweet crepes)
- 2 tablespoons of vegetable oil (sunflower, rapeseed or coconut)
- **500 ml of vegetable milk (soy drink, almond, oats, rice…)
- 1 teaspoon of vanilla extract or orange blossom (optional)
- A pinch of salt
Optional for a version without egg : Replace the eggs with 100 g of yogurt vegetable (soy or coconut) or 1 crushed banana.

Preparation (5 minutes):
- In a large bowl, mix it flour, sugar and a pinch of salt. If you opt for a gluten-free version, use a suitable flour (rice, buckwheat, gluten-free mixture).
- Add the vegetable oil and mix lightly.
- Gradually incorporate the vegetable milk while whisking to avoid lumps. You can use soy milk, almond, oat or any other plant-based milk of your choice.
- Add the vanilla extract or orange blossom to flavor your pancake batter.
- For an egg-free version, integrate the vegetable yogurt or the crushed banana to the preparation and mix well.
- Let the dough rest a few minutes if you have time, otherwise you can go straight to cooking.
Cooking :
- Heat a crepe maker or non-stick pan over medium heat. If necessary, lightly grease with a little oil or vegetable margarine.
- Pour a small ladle of batter in the pan, tilting it to evenly distribute the batter.
