Ingredients :

  • Asian noodles : 250g (soba or ramen type)
  • Carrots : 2, julienned
  • Peppers : 1 red and 1 green, finely sliced
  • Broccoli : 1, cut into small bouquets
  • Bean sprouts : 150g
  • Garlic : 2 cloves, sliced
  • Fresh ginger : 1 cm, grated
  • Soy sauce : 3 tablespoons
  • Sesame oil : 1 tablespoon
  • Sesame seeds : to garnish
  • Salt & pepper : according to taste
  • Red pepper (optional): minced, to add a little heat

Preparation :

  1. Noodles : Cook the noodles according to package directions, drain and set aside.
  2. Vegetable stir-fry : In a large frying pan or wok, heat a little oil. Add the garlic and grated ginger. After a minute, add the carrots, peppers and broccoli. Sauté for 3-4 minutes.
  3. Bean sprouts : Add the bean sprouts to the pan and continue to stir-fry for 2 more minutes.
  4. Seasoning : Pour the soy sauce and sesame oil into the pan, mix well. If desired, add chopped red pepper for a spicy touch.
  5. Noodles : Add the cooked noodles to the pan and stir-fry until everything is well mixed and hot.
