Christmas pump

ingredients :

1 kg of flour
20 g baker’s yeast
4 eggs
300 g of powdered sugar
1 quarter liter of olive oil
Zest of 3 oranges
2 tablespoons of anise seeds
1 glass of orange blossom water
Salt

Preparing the Christmas Pump recipe

Dissolve the yeast in half a glass of sugar water.
Mix this preparation with 100 g of baking powder to make the sourdough.
Leave to rest for 2 hours in a warm place without drafts so that the leaven doubles in volume.
In a bowl, pour the flour, 1 pinch of salt and the sugar.
Make a well in the middle and add the eggs, oil, orange blossom water, finely chopped orange zest and anise seeds.
Knead for a long time so that this dough becomes soft.
If necessary add a little water.
Make a ball and let it rise in a warm place for 3 hours.
Knead the dough again and flatten it with a rolling pin to have 2 round pancakes.
In the middle of the pancakes, make a circle with a knife and 5 lines along the dough to make the rays of the star.
Place them on two oiled baking sheets.
Leave to rise for 2 more hours.
Bake for 30 minutes in the oven at 240°C (thermostat 8).
